Writer's Block: Pick and Stick

If you could only eat one kind of cuisine—Mexican, Thai, French, Italian, Indian, Chinese, etc.—for the rest of your life, which one would you choose?
I love each of those cuisines (although I haven't had much French - I did have some memorable French-Vietnamese fusion dishes, but that probably doesn't count.) However, if I was forced to eat only one, I'd go with Indian. I have never met an Indian dish I didn't at least like, and most of the dishes I've had I've loved. I adore most of the condiments and nearly all the spices.

Also? Giving myself "Indian" cuisine is a bit of a cheat, because I'm granting myself the infinite variety of the sub-continent; I'd never get gastronomically bored. I mean, saying "Indian cuisine" is a bit - more than a bit, actually - like saying "African cuisine," or "European cuisine" or even "American Cuisine." All of those are large, and contain multitudes.

I have a cookbook on cuisine from Goa in India that I'm still looking to try out one of these days.

I can't recall posting a "me, too!" response ever, though I may have sometime so long ago I've forgotten about it.
Yes, "Indian"! The only competitor is "Chinese".
Tangentially, who the devil is responsible for the preposterous neologism "pan-Asian"? Imagine the success of a restaurant which billed itself as "pan-European"! (with apologies to Joy Yee's, which is wonderful.)

Well, it's marginally more accurate than the term "fusion" when it comes to cooking, because it does suggest attention to geography, and a vast spread of it to boot. Fusion merely makes one wonder if something was thrown into a particle accelerator with two tablespoons of yeast and a heartfelt belief in fairies.

That would run a very close second to me, particularly since living in Chicago gives me access to loads of different types of Mexican.
